All this has filled us with a tremendous feeling of gratitude and enthusiasm along with renewed optimism for what lies ahead for us this year at Fischer’s Baslow Hall. This recognition offers us a moment to pause and reflect on the extraordinary journey we have embarked upon so far.
John Shuttleworth has officially taken over the reins as Head Chef at Fischer’s. Having worked at the restaurant for only 2 years, he has recently introduced an exciting new 10-course tasting menu, in addition to the a-la carte lunch and dinner menus. Highlighting the finest seasonal ingredients and an array of tantalising flavours. Each dish celebrates his personal creativity and style, reflecting his unique individuality and artistic vision. This marks an exciting journey of rediscovery for him, characterised by a vibrant exploration of flavours and innovative culinary techniques. His commitment to crafting unforgettable dining experiences for our valued guests remains stronger than ever as he continues to push the boundaries of taste and creativity in our kitchen.
We are excited to announce our ambitious grow plans, expanding our kitchen garden, which will significantly boost our capacity to cultivate a wider variety of fresh produce. Under the expert guidance of our dedicated Head Gardener, Kim Orwin, we are committed to enhancing our growing practices. Kim’s deep passion for horticulture and her collaborative efforts with our talented kitchen team enable us to transform the fruits of our labour into award-winning dishes that delight our guests. We are dedicated to improving our sustainability efforts. This journey not only enhances our offerings but also strengthens our connection to the land and the community we serve.
Over the past year, we proudly launched our stunning new summer terrace with the support of Castelnau, LVMH, Gusbourne, and Bentley UK. This vibrant space will re-open this May with some exciting new announcements. We will introduce a delightful terrace menu featuring seasonal dishes specially crafted for outdoor dining by John Shuttleworth. Weather permitting, we hope to serenade our guests with the enchanting sounds of live music. This melodic backdrop will create a warm and inviting atmosphere, encouraging joyous interactions and memorable moments for all who visit us.

In 1988, when Max and Susan Fischer first saw this Derbyshire gem, the house and grounds had fallen into a state of neglect. It was love at first sight. Moving their young family and country restaurant into the house, they set about transforming this sleeping beauty into the delight we now know.

· John Shuttleworth Biography - Head Chef - Fischer’s Baslow Hall
We were delighted to welcome John into our family as Sous Chef in the summer of 2022. His journey with us took a significant step forward when he embraced the role of Head Chef in the summer of 2024.
John's love for cooking was ignited at the tender age of 12 while he joyfully prepared meals alongside his grandmother in their cosy kitchen. Those early experiences laid the foundation for his culinary passion and creativity.
Over the past few years, John has treasured his time at esteemed establishments such as Mallory Court, Glenapp Castle, and Rust en Vrede in South Africa. Working alongside exceptional chefs in these remarkable kitchens allowed him to hone his skills and gain invaluable insights into the art of fine dining. Deeply committed to the philosophy of using quality ingredients, John thrives on sourcing produce that is not only fresh but also as local as possible. He takes immense pride in utilising ingredients from our own kitchen garden, which brings a unique and personal touch to his dishes. While he doesn’t claim a specific “signature dish,” he relishes the opportunity to create exquisite fish dishes that showcase his culinary talent.
Outside the kitchen, John treasures the moments spent with his wife and daughter, engaging in laughter and creating lasting memories. A true football enthusiast, he eagerly watches his favourite team, Nottingham Forest, and revels in the excitement of the game whenever he gets the chance.
