Tapping into the trend that has taken sweet treats by storm, seen in everything from Dubai chocolate to pistachio lattes, Binks Yard is flipping the script by showcasing pistachios in savoury dishes that bring depth, texture, and indulgence to the table.
Leading the charge is the all-new Mortazza pizza, a rich, Italian-inspired creation that brings together a truffle crème fraiche base, silky slices of Mortadella ham, creamy burrata, and a generous scattering of crushed pistachios. This luxurious pizza delivers bold flavour with a satisfying crunch and is already turning heads as one of the must-try dishes of the season. This new dish is part of a wider menu refresh that embraces global flavours and lighter, brighter bites for spring.
Lewis Thornhill, executive chef at Binks Yard, said: “We wanted to embrace seasonal ingredients in an exciting and innovative way, and pistachios are having a huge moment right now. We’ve seen them in desserts for years, but we’re bringing them into savoury dishes where they add an unexpected hit of flavour and a really satisfying texture. The Mortazza pizza is delicious and indulgent, and we’re excited to see how our guests respond.”
The ever-popular Binks shawarmas have also been given a spring update, with new Creole salmon and bulgogi beef options joining the much-loved chicken shawarma. Perfectly spiced and bursting with flavour, these handheld delights are sure to be a hit with diners looking for something fresh and exciting this season.
The range of Binks Bites, the restaurant’s small plate selection, has also been updated with bold new flavours. Highlights include Thai crab cakes with Binks’ signature sweet chilli sauce and crispy beef with ssamjang sauce, fresh chilli, and spring onion. Returning favourites such as the Goan lamb kofta and Indian spiced hummus with wood-fired flatbread ensure that there’s plenty to share and savour.
Adding to the lineup, the fiery buffalo chicken mac ‘n’ cheese delivers a bold and spicy twist on a comfort food classic. Meanwhile, the much-loved burrata salad makes a triumphant return, offering a creamy, refreshing option that perfectly balances the menu’s richer flavours.
Rounding off the new menu are indulgent desserts, including the return of sticky toffee pudding and chocolate fondant, alongside a fresh spring-inspired saffron and cardamom poached pear, served with yoghurt and pistachio white chocolate.
Lewis added: “Our dishes highlight the best seasonal ingredients while staying true to our signature bold flavours. We’ve taken inspiration from global cuisines, incorporating fresh, vibrant ingredients that reflect the lighter, brighter days ahead. Whether it’s enjoying the surprising flavours of our Mortazza pizza, the exciting new twists on our shawarmas, or the decadent dessert options, we want our guests to experience something truly special this season.
“We also know how important it is to offer variety and convenience, which is why we’ve expanded our express lunch menu and introduced new small plates that are perfect for sharing. There’s a real focus on big flavours and quality ingredients throughout, and we can’t wait for our guests to come and discover their new favourites.”
